Welcome to What’s Cooking Wednesday, hosted by Tales from the Fairy Blogmother. I am always on the lookout for easy rice recipes – especially those that include a lot of vegetables, so when I saw this one for rice with summer squash in the June issue of Bon Appetit, I knew I had to try it. It’s perfect as a side with something a bit spicy, as while the rice is delicious, it has more subtle flavors. It’s also full of seasonal squash. I also really enjoyed the leftovers cold with some greens and salad dressing.
