Karina’s Sweet Potato and Black Bean Enchiladas

As you may know from reading this blog, several weeks ago I had to switch to dairy-free eating. And, being a blogger, I of course looked to other bloggers in this situation. That’s how I rediscovered Karina’s Kitchen, Fresh Recipes from a Gluten-Free Goddess. You see, in addition to abstaining from gluten, Karina eats also completely dairy-free, avoids soy and generally has to live with many food allergies. Reading through the archives of Karina’s blog has been a wonderful activity reminding me there is plenty of delicious food left to eat, even now. And as Karina says, there are worse things than being allergic to cheese {I still hope I am going to be able to eat a bit of cheese in my life though}.

Anyways, Karina is all-around wonderful to read, whether or not you have food allergies. The first recipe I tried from her site was the Sweet Potatoes and Black Bean Enchiladas, which were absolutely delicious. Husband and I made a chicken variation for him. I absolutely loved Karina’s black beans and sweet potato enchiladas and hope you enjoy them as well.  

I topped my enchilada with some guacamole. We also made a version of this enchilada for my husband with chicken instead of the sweet potatoes and lots of cheddar cheese since he can eat dairy:

These look absolutely wonderful. There's another fabulous, mostly dairy-free blog called doghill kitchen, that you might really enjoy.

This dish looks great, dairy-free or not! I love Karina's recipe too. Just goes to show that you can still eat well no matter what your dietary restrictions are.
