I cooked with millet the very first time recently. I made Cinnamon Quill’s vegan version of Paradise Casserole, which was good, but my favorite part was the millet. It has a texture similar to polenta, but almost creamier, even without any dairy added. It is very high in fiber too, and has a host of other beneficial properties. As you can see from the picture above, I used the millet as the bottom layer of the casserole. I am now wondering if I could make a millet layer covered by caramelized onions flavored with thyme, but I am wondering what else I could add. One thing is sure, I will be eating more millet soon!

Interesting! Does it have lots of protein and fiber? I've never made anything with it before.
