Banana soft serve

Happy Sunday! Thank you again for all your super-sweet emails and comments and tweets regarding my meditations in an emergency room post. I am happy to say that just over a week later, I am feeling much much better.  My follow-up doctor’s and naturopathic visits revealed that my magnesium levels had apparently dropped a lot in a just a couple of months, likely because my Vitamin D levels (which used to be low) had shot up.  Since Vitamin D apparently uses magnesium for absorption, the inverse relationship makes sense.  I was told to triple my magnesium, and after three days of that, the last bits of pain and soreness went away. So yay!

In the meantime, I am indulging in banana soft-serve, seeing as bananas are a good source of magnesium.  If you are curious about how to make banana soft serve, see Gena‘s method using a food processor here, and Averie‘s Vita-mix method here.  There are countless variations on soft-serve – and the  beauty of using bananas is that they are so sweet, so no need for additional sweetener.

* Another Year on the French Diet made the Curried Azuki Beans with Mango and Spinach I made a month ago. It is always so exciting when I hear that readers made a recipe they read about here.
* I am off to have brunch with Carolyn of  Hang on Tomato at one of my favorite DC retaurants, Cafe Green.
