New apples! As much as I do not want summer to end, which is totally uncharacteristic of me, this little sign of fall at the Sunday market yesterday made me happy. There’s a Gala apple on the left, and a Honey Crisp on the right. The market still has a bounty of produce – look at all the peppers I picked up:
For lunch yesterday, I decided to remake the sweet potato and avocado sandwich that fell apart on me on Tuesday:
Buying new wraps definitely helped. I am so glad Gena posted this recipe. She uses kabocha squash but I substituted sweet potatoes and added hot sauce and scallions. Doesn’t this look delicious:
Clearly, I needed more greens, as I finished the above and then polished off another bowl of kale salad, with scallions, nutritional yeast and more hot sauce:
And figs drizzled in vanilla-flavored agave:
It was an epic lunch. Perfect for taking a nap afterwards, which I sorely needed after all the excitement of Saturday. For dinner on Sunday, I made this Semi-Traditional Panzanella (recipe here) which really hit the spot in terms of using the lovely market produce:
