Pizza and Fries

Ok, not really, but dinner last night was a little reminiscent of those textures:

Carrots fries (Book of Yum’s recipe), Roasted Okra (aka okra fries to me, FatFree Vegan’s recipe) and Roasted Green Beans (aka green bean fries, following this simple recipe).   And a sort-of-pizza situation because I had the worst pizza craving.  Nights like last night, knowing that dairy and I are not supposed to interact gets hard. Fortunately, there’s options.  And piling on the veggies helps.

Here are the veggies, being arranged by my husband and almost ready to go into the oven:

Essentially, here is what we did:

Roasted Veggie Frites
2 servings

  • 3 carrots, cut into thirds, and then sliced into “fry” shape
  • 1/3 pound of green beans (trimmed if you so desire; we only trimmed one end off)
  • 1/2 pound of okra, cleaned
  • 1 Tbsp extra-virgin olive oil
  • salt and pepper to taste

Preheat oven to 425F. Line a large baking sheet with aluminum foil.   Toss vegetables with extra-virgin olive oil; season with salt and pepper.  Spread on baking sheet.

Place in oven for 7 and a half minutes, rotate baking sheet and bake for another 7 and a half minutes. 
Rotating the baking sheet ensures even cooking. The green beans and the carrots will caramelize a bit:

The okra will get crunchy on the outside and very gooey on the inside.  It’s not exactly like french fries, but it’s a nice frites-like experience.

Along with the frites, I spread some tomato paste on a Food for Life gluten-free tortilla made with brown rice flour, and topped the tomato paste with two cups kale, massaged with a bit of olive oil, a teaspoon of brown rice vinegar, a tablespoon of tahini, a third of a cup of nutritional yeast, a big pinch of sea salt and some hot sauce.   I baked this alongside the frites while my husband made a chicken sausage on our indoor grill to go with his frites. I was craving something cheezy and the tortilla piled with the tomato paste and kale-nutritional yeast-tahini goodness hit the spot.

Dinner last night really hit the spot, though, while the tortilla-topped-with-nutritional-years goodness was sort of pizza-like, we are planning to hit Pete’s Apizza (remember how I totally raved about Pete’s recently) today as part of our day out and about.  So my pizza cravings should go away shortly!
