Happy happy Friday! Can you tell I am excited?
Here are the details on lunch + 2 snacks today:
- 1 cup of quinoa mixed with 1 cup defrosted peperonata (I made this a couple of weeks ago and froze a cup of it) and steamed broccoli:
- Cut up celery and carrots (I plan to eat them with some of the beans as a snack)
- Side of my pink to lime beans:
- Pumpkin cacao chia seed pudding (note: this needs some work before I get this right)

Your lunch today looks absolutely delicious. I might try my hand at some pumpkin chia pudding this weekend as I have a lot of pumpkin and chia seeds on hand and love the combination.
