- I was worried today’s lunch and two snacks might not be filling, but somehow it was:
- Collard wraps with hummus, sliced zucchini and red peppers:
- Mary’s Gone Crackers Sticks and Twigs
- Two 16oz super quick green smoothies
I find the best way to make collard wraps is to trim down the stalk a bit – Gena explains it really well, with action shots, as does Vegan Epicurean. I tend to keep mine pretty basic when packing a lunch – usually hummus and veggies. When I make collard wraps at home, I love using guacamole or other ingredients that do not pack as well. Today’s two rolls (each cut in half) were basic but satisfying:

Wow! I really need to step up my game here. My lunch now has self-esteem issues. I'm going to have to try your collard wrap concept. That looks wonderful.
Your green smoothies are… SO GREEN! I could never get mine to that color. Maybe because I'm not putting enough greens?
