Belatedly, here is Monday’s lunchbox:
- Steamed broccoli with Book of Yum’s Gluten Free Vegan Indian Vegetable Pulao (see my post from last night on other great recipes from Book of Yum).
- Kale chips, made by dehydrating Ricki’s Hail to the Kale Salad (see one of last week’s lunchbox for more background).
Today was such the day of best-laid plans gone awry – I should have brought at least two more snacks with me to work, as I ended up staying really late. Though, truth be told I did not actually plan a lunchbox today as I was supposed to take today off for my birthday. And you may notice that the picture above is eh. So yes, this was totally one of those days.
