I had very little appetite this morning, so ended up packing most of my smoothie. So today’s lunchbox is actually (most of) breakfast, along with lunch and two snacks:
- Chocolate Milkshake Smoothie (I used 2 cups of spinach instead of 1)
- Celery
- Figs
- Salmon cake with brown rice and the last of the eggplant chana dal experiment (see below)
- Lemony sunflower kale chips
This lunchbox is an example of several recipe ideas that sort of went nowhere. The lemony sunflower kale chips tasted bright and lemony but somehow not the cheesy lemony experience I was looking for, so I am not sharing the recipe. I talked here about the eggplant chana dal idea, and the salmon cakes – ok, those I am surprised I was unhappy with. I wanted to skip using eggs and gluten-free breadcrumbs or oats for the binder, so tried chickpea flour and Vegenaise (yes, I do occasionally eat processed foods, and Vegenaise made with grapeseed oil is one of them). The positive is that the chickpea flour and Vegenaise literally made the salmon cake puff up. The negative is that I wanted a little more texture to the salmon cake, and I think using some breadcrumbs is necessary. More celery too.
On other news, I am always on the lookout for lunchboxes on other blogs, and I saw one today over at fANNEtastic food.

Mmm i love figs. And you are SO good about packing your lunches – inspiration for my future work lunches!
I often have those less-than-happy-with recipes that end up in my lunch too! figs, so jealous!
