{Today’s Lunchbox} Lots of Kale

Thursday LUnchbox 002

Today’s lunch and two snacks are:

  • 1/2 cup quinoa tossed with 1/2 cup chickpeas, 1 1/2 cups shredded dino kale, 1 tablespoon extra virgin olive oil and a big pinch of seasalt.
  • Thai Red Curry Kale Chips
  • Buckwheaties tossed with some agave, pumpkin seeds, flaxseeds, and a tiny bit of sea salt,  dehydrated overnight.  

Maybe it is because of the cooler weather, but I have granola on the brain, which means I am going to be experimenting again with various combinations, as well as recipes (like this one from Affairs of Living).  I love using buckwheaties as the base as they are so crunchy. 

On other lunchbox news, remember I mentioned Anne of fANNEtastic Foods last week as she had a quick tempeh-based lunchbox.  She mentioned that she has several more Five-Minute Lunches as part of her recipe index.  And Ashley of A Healthy, Happier Bear is doing a bring lunch to work challenge for herself.
