This weekend lunchbox is from a day trip husband and I took to Baltimore in August.
- Coconut Lime Tofu tossed with 2 cups of chopped bell peppers, a cup of quinoa, chopped scallions and jalapenos.
- Vegan overnight oats, using half a banana, 1/3 cup of gluten-free oats, 3/4 cup unsweetened almond milk, 1/2 scoop of Sun Warrior powder, a tablespoon of raw cacao and a tablespoon of chia seeds.
- Mary’s Gone Crackers Curry Sticks and Twigs
- Lara Bars
I have talked before how I avoid Lara bars on a day-to-day basis because they are high in sugar, even if it is natural sugars, but I do save them for when a portable snack is a good back-up. I packed a lot of food that day as we were going to be gone from 10 am until 1am.

Guacamole makes everything better, doesn’t it?
Had I known a Chipotle was going to be on our route that day I might not have packed as hefty a lunchbox, because I find Chipotle a good option – I usually get a veggie bowl with no rice, black beans, veggies and salsa and guacamole, but I also love just being able to pick up guacamole to supplement an already yummy lunch.

I absolutely LOVE Chipotle. It's the only place I know I can have almost everything on the menu, which is a rarity for gf eating in the MidWest. I get the same thing as you, too. Most of the time! 😀
You're still a girl with more willpower than I. I am a HUGE fan of Chipotle. It's one of those rare "safe" fast food places – and somewhere I can eat where the food is actually pretty good for you. (especially if you leave out the stuff I can't eat anyway – dairy and gluten). They're good at finding sustainable foods, too. And it's delicious – the guac is definitely a "must"! I love them. Can you tell?
