While I try hard to post my lunchbox the day of, there are days like last Friday where I have another lunchbox topic in mind, so there are days where you might see a lunchbox from another day. Like today. I am sharing my lunchbox from Friday, which contained one snack and one lunch:
- Vegetable stir-fry with tofu
- Gena’s awesome sweet-potato avocado and chocolate pudding, made with a tablespoon of agave instead of dates (see here for my slight variation). I had about a third of the recipe for breakfast and saved the rest for a snack. It was delicious and very mousse-like.
- 1/4 cup buckwheaties (I used the recipe from Ani Phyo’s Raw Food Kitchen, but Choosing Raw has virtually identical instructions). I love mixing buckwheaties into the chocolate pudding.

The pudding and the buckwheaties look intriguing. My fellow bloggers are starting to tempt me to try raw foods like the recipes in Ani Phyo's Raw Kitchen. I checked it out of the library and liked what I read.
That pudding looks yum. I am new to Gena's blog thanks to you and Ricki. Love it! I haven't explored it yet, I've only read current posts so I can't wait to go back and have a boo! If I lived near you I would so trade you lunches – or maybe just steal yours! Haha.
