Today’s lunch and two snacks are all about ease and speed:
- Indian-spiced brown rice with vegetables, very loosely based on this Indian “unfried” rice recipe.
- Half a recipe Pumpkin Ovenight Oats (I substituted vanilla stevia for maple syrup and skipped the toppings).
- Super Quick Green Smoothie.

So I'm curious what you think about Stevia. I know very little about it at this point, and I'm nervous to try it. Is it going to be like Nutrasweet, where we find out harmful effects 20 years down the road?
I'm really asking because I have been trying to do some research on it and thought you might have some advice!
