I was so happy to remember I had Sunshine Burgers the day of this lunch. It sure made pulling this lunch together easier. Here are lunch and two snacks
- Indian-spiced brown rice with vegetables, very loosely based on this Indian “unfried” rice recipe.
- Half a recipe Pumpkin Ovenight Oats (I substituted vanilla stevia for maple syrup and skipped the toppings).
- Super Quick Green Smoothie
- Thai Red Curry Kale Chips
- Falafel Sunshine Burger
