So, as promised, the lunchboxes were only on hiatus for Thanksgiving week. Today’s lunchbox is actually one from last week that I saved for today. While I really love the idea of posting the lunchbox the same day I eat it, I do not think that is actually going to be possible these next few weeks. The upside is that I get to tell you how some of my experiments with flavors and ingredients turned out. So here are the lunch and two snacks:
- Quinoa with chickpeas and diced avocado and lime juice and leftover spaghetti squash and steamed sweet potato. This should have been a great combination, but honestly it was kind of a fail flavor-wise. Also, I was trying to get over my squeamishness of slightly brown avocado by cutting the avocado up in the morning and just stirring it into the salad, and that totally did not work. While the avocado barely browned, it still bothered me.
- Hummus to which I added 1/2 teaspoon chipotle chili powder while making the recipe. Note to self, this makes very spicy hummus, even for someone like me who likes heat.
- Celery
- Super Quick Green Smoothie, with leftover steamed sweet potato instead of banana
