Today’s lunchbox is another left over from last week. This lunchbox included a completely new recipe – fava bean dip – and a new approach to spaghetti squash. Here are the specifics for lunch and two snacks:
- Quinoa tossed with cooked white beans (I used my rice cooker for both, though I did cook them separately), along with lemon juice, seasalt and extra-virgin olive oil.
- Baked unseasoned spaghetti squash with homemade hot sauce
- Celery
- Fava bean dip
- Chocolatey overnight oats with unsweetened sunbutter (I need to write up this recipe)
