This is totally a lunchbox of favorite staples of recipes from other bloggers – here are lunch and two snacks:
- Espinacas con Garbanzos
- Celery
- Gena’s awesome sweet-potato avocado and chocolate pudding, made with a tablespoon of agave instead of dates (see here for my slight variation). As usual, I made a full recipe in the morning, ate half for breakfast and this is the other half. I love this recipe (see here).
- Buckwheaties, also inspired by Gena’s blog. Stirring about a 1/4 cup of buckwheaties for half a recipe of sweet-potato avocado and chocolate pudding makes it a wonderful crunchy yet creamy treat.

LOVE your lunchbox series. Now that I'm not on the meal plan at my school, i have to come up with genius recipes for lunches and dinners. Yours are perfect, especially the spinach and chickpeas. easy AND delicious!
