By Fridays I always am low on greens. Some weeks I plan well and have enough for a green smoothie, but this week – not so much. So today’s lunch and two snacks are:
- More Cinque topped with tomato paste, because I am obsessed
- Baked spaghetti squash with white beans cooked with sage, celery and carrots
- Hummus
All in all, pretty similar to yesterday’s lunch. And dinner will involve a big pile of greens for sure.
