Today was a Monday of running around between several appointments in the morning before going to work, so I wanted lunch to be spill-proof and lighter in terms of containers and parts. So no green smoothies today, but lots of color nevertheless:
- Grain-free sushi rolls based on this recipe for pumpkin seed pate nori cigars by Ricki, with my addition of roasted sweet potato
- Festive Swiss Chard
- Roasted pumpkin and squash seeds (I am so thankful my husband has the patience to prep seeds when we roast pumpkins and squash and then pop the seeds into the oven with some olive oil and salt)

These lunchbox posts are literally awe-some. I've got a good grip on vegan breakfasts and dinners, but lunches, for some reason, leave M and I a bit lost. These offer great inspiration. Thanks, love!
