Happy Monday! I am so looking forward to this week being a short week. And I am glad that the snow from a year ago exactly today is not here. I much prefer snow when I can stay home inside with some yummy hot chocolate. I am submitting this photo to No Croutons Required‘s December photo event. Instead of a recipe (remember the ones I submitted: carrot soup, noodle salad and chickpea and quinoa salad?) this month is all about festive photos. When I saw that, I immediately thought of the above photo – for some reason it makes me think of the holidays, even though I am realizing now it is has no sign of decorations. I guess the snow is the festive part?
On other news, as you may have already gathered, these next couple of weeks will be a bit quieter on the blog in light of the holidays. That said, do check out this recipe for Coconut Lime Tofu from earlier this year that I am submitting to Slightly Indulgent Tuesday over at Simply Sugar & Gluten-Free as well as Gluten-Free Wednesday. It is a wonderfully warming dish, with a touch of nostalgia for warmer weather, which I am definitely experiencing right now – the nostalgia, that is, not the warm weather.
