{Today’s Lunchbox} A New Obsession

{Today’s Lunchbox}
Today’s lunchbox contains one of my new obsessions: Cashew Pumpkin Seed Cheese with Apple Cranberry Sauce from Affairs of Living.  Kim’s blog always has wonderful ideas for those of us avoiding gluten and dairy and refined sugars (see my post adopting Kim’s blog for Adopt a Gluten-Free Blogger last year).  Here are today’s lunch and one snack:
  • Lightly steamed kale
  • Two generous servings of Cashew Pumpkin Seed Cheese with Apple Cranberry Sauce – one to go with the almond flour bread at lunch and one with the celery sticks for a snack. Incidentally, I made the apple cranberry sauce using just stevia as the sweetener and it worked out wonderfully.
  • Celery
  • Elana’s almond flour bread (the 1.0 version), made with two ducks eggs instead of three chicken eggs.  I recently discovered that the farmer’s market I go to every Sunday (where all eggs sourced are ethically produced, free range and largely grass fed) has a vendor who sells duck eggs so am trying them out as I try more grain-free baking.  I am still figuring out ratios of duck to chicken eggs.  While the traditional ratio is 1 duck egg equals 2 chicken eggs, I am realizing that the duck eggs which I can buy are on the small end and that duck eggs seem to behave a bit differently in grain-free baking as opposed to grain-based baking.  That said, since I never baked grain-free when I ate chicken eggs (and frankly, did not bake much prior to switching to a gluten-free diet), it is hard to be sure.  So far I am finding that the duck eggs I am working with seem to be more of a 1 to 1.5 ratio as opposed to 1 to 2 ratio.  My next step is actually weighing the eggs to compare them to chicken eggs by weight)
