Today’s Lunchbox
I am continuing my approach of sticking to the same cookbook and/or blog for several days at a time. Today’s lunch and two snacks are:

- Smoothie made of almond milk, brown rice protein powder, roasted pumpkin, pumpkin pie spice and ice
- Funa (aka fake tuna salad) from The Spunky Coconut Cookbook stuffed into collard wraps with carrots and peppers

I haven't had a pumpkin smoothie in so long! AND I've been eyeing up the collards at my local market lately. Definitely going to be biting off you next week!
Those collard wraps look divine. Definitely need to get the Spunky Coconut book!
