Today’s Lunchbox

As I have mentioned earlier this week, I have been cooking from The Spunky Coconut Cookbook.  Today’s lunchbox includes two dips from the book, both of which I loved.  Here are lunch and two snacks;

  • Pineapple Coconut Quinoa from The Spunky Coconut blog
  • Smoothie made of almond milk, vanilla brown rice protein powder, roasted pumpkin, pumpkin pie spice and ice
  • Funa (aka fake tuna salad) from The Spunky Coconut Cookbook
  • Black bean dip, also from The Spunky Coconut Cookbook
  • Collard wraps stuffed with more of the black bean dip, dry-grilled tofu, carrots and peppers
  • I have been loving recipes from The Spunky Coconut Cookbook – honestly, the only downside is that both the Funa and the black bean dip have Vegenaise, which has totally kicked my Vegenaise cravings into high gear.  I occasionally eat it, but because it is not a whole-food, I try to keep it to an occasional treat.  Making both those dips in one week has totally reminded me that I really like Vegenaise (I use the grapeseed oil variety), which is totally odd because I never liked mayo out of a jar when I ate eggs.  Go figure.  Both dips are great, but I have to say the black bean is particularly awesome. I have yet to find a black bean hummus recipe I like, and I generally find black beans difficult to turn into a delicious dip (compared to say chickpeas or white beans), and I found this black bean dip to be truly outstanding.
