I guess mistakes have to happen. When I was making this lunchbox, I thought a cold soup of romaine and celery with green peppers and miso would be lovely (I ate a lot of them while recovering from surgery). So I used a splash of homemade broth, pureed it all in the Vita and took a picture. See how nice and green it was in the picture? Yes, well, by 1pm, it had turned an awful shade of brown and fermented and swelled. Ick. I guess that is one Vitamix concotion best eaten right after blending. So do as I say – i.e. no cold soups with miso – not as I do.
Aside from that failed idea, here are the contents of today’s lunchbox and one snack because, as you know, the other snack – well it kind of failed. Nevertheless, there were good eats:
- Smoothie made of almond milk, vanilla brown rice protein powder, roasted pumpkin, pumpkin pie spice and ice
- Roasted sweet potato, to be topped with Funa and Black Bean Dip
- Funa (aka fake tuna salad) from The Spunky Coconut Cookbook
- Black bean dip, also from The Spunky Coconut Cookbook, with a drizzle of hot sauce
