Today’s lunch and two snacks:
- Half a recipe of Wendy’s awesome cranberry apple kale smoothie (so refreshing!
- Buckwheaties and a side of unsweetened almond milk with a few drops of vanilla stevia.
- Sesame crackers from the Gluten-Free Almond Cookbook, made with duck eggs.
- Steamed kale, topped with chopped red pepper and two slices of Twin Oaks Extra Firm Tofu in the Italian Herbs flavor. I love Twin Oaks tofu. It does not require any pressing, it local-ish to me (a couple of hours away), and grills beautifully in a dry pan.

On other news, the snow here in Washington, DC seems to have disrupted a lot of commutes and lives. I hope everyone out there is ok!

I'm down in richmond and everyone freaked out about the snow last night, but it turned out to not be too bad this morning!
