Happy Monday! Today’s lunch and two snacks are:
- Dairy-free cheesy bread and vegan spicy black bean dip
- Cran-berry Smoothie. I am a recipe tester for Ricki’s next e-book, and this was the third recipe I tested and I love it. I cannot tell you about the ingredients, but I can tell you that the smoothie is creamy, satisfying and delicious.
- Raw carrots
- Steamed collards
Today’s post is the 900th one on this blog. I find this completely unbelievable. Granted there are several guest blog posts among the 900, but I still feel like I just started blogging recently, and 900 posts feels, so, vast. Then again it will be four years in April since I started blogging, so 900 should not be as surprising as it is.
