{Today’s Lunchbox} Faye’s Lunchbox III – Inspired by 4 Different (High) Raw Foodists

Today’s lunchbox is another great one by guest lunchbox blogger Faye.  See Faye’s last two lunchboxes here and here.

Today’s Lunch:

It seems like I’ve been inspired by a number of (high) raw foodists this week! Kristen Suzanne’s Harvest Soup has become a fast favourite since I first spotted it at Raw on $10 a Day (or Less!). It was a great transition meal for me as its ingredients are foods I often had in my home anyway.

Next (again) are Gena’s Juice Pulp Crackers. I can’t get enough of them.

I did end up trying Ani Phyo’s raw Red Pepper Hummus. It’s phenomenal. I tried it this weekend on just about everything: crackers, veggies and in collard wraps (again inspired by Gena – I’m going to have to thank her one of these days!).

The smoothie is out of Victoria Boutenko’s Green Smoothie Revolution (a great little read with dozens and dozens of green smoothie recipes). It includes tomatoes, celery, spinach and lots of basil. It’s just great.

Last and certainly not least are the cranberry scones. They are probably my favourite raw dessert. They were one of the first dehydrator recipes I tried when I bought my Excalibur and I immediately feel in love with them. They’re soft on the inside, slightly crunchy on the outside, tart and sweet. This recipe is also from Victoria, in her Raw Family Signature Dishes book.

Today is going to be a great day!

(This week I hope to try out Valerie’s Cranberry Almond Bittersweet Chocolate Bar. It looks incredible!)

Thank you Faye! I too love Gena’s recipes, and collard wraps have become a mainstay for me thanks to her tutorial.

Yay for high raw recipes. Sounds like a great lunch. I'm dehydrating my first raw crackers right now…we'll see how they come out!
