Happy Tuesday! I wanted to share my lunchbox from a couple of days ago with you all. I have written before that weekend lunchboxes have been a great discovery for me. I feel like they allow me to reclaim some time to myself. In cold weather it has definitely been a bit harder to motivate to make them, but on Sunday I reminded myself of one additional advantage to weekend lunchboxes: I eat my weekend lunchbox within a couple of hours of packing it, which means I can pack things like apple or avocado slices and not worry about them browning. So Sunday’s lunchbox contained:
- Steamed kale
- Rollups with Apples and Sweet Potato Spread.
The rollups are another item for recipe testing for Ricki’s new ebook Top of the Morning: Breakfasts without Sugar, Gluten, Eggs or Dairy: The original recipe is for socca rollups, but Ricki suggested collard wraps as a substitute. These wraps were awesome. Look at the yumminess:

I am really enjoying this issue of Real Simple. It was so nice to take a break amid errands to relax with a good magazine and some delicious food.
And yes, I was sitting at Whole Foods for this break, and could just as easily have gotten food from the salad bar, but that would have required more label reading and checking for allergens (plus, let’s face it, a salad bar can be a source of cross-contamination) than I had time for. Living with food intolerances is really about making things less stressful for me, and this lunchbox, with a magazine, was all about that.

Your wraps are gorgeous! I love the color contrast of the green and orange. I've often had the spread in collard leaves, too, and just love it. Thanks for posting about them. 😀
