Today’s lunch is my inaugural Laptop Lunch. Laptop Lunches sent me one of their bento box sets – they are different then traditional bentos in that they are a bit bigger, but that works well for me since I like to bring several snacks.
Today’s lunch and two snacks include:
- Leftover gluten-free almond flour flatbread topped with zucchini and tomato paste with herbs and garlic. The crust is lovely – chewy and a bit doughy – I found the recipe at Ginger Lemon Girl. I love the secret addition of white beans. I used two duck eggs instead of three chicken eggs in the recipe.
- Kale salad and carrots
- Vegan Caesar dressing, recipe forthcoming in the next few days (updated: recipe link here).

That lunchbox is way cute! I bet it's a good way to keep portions under control. Of course, I look at it and go "aaah, I feel confined!" lol

I got one of these for my daughter a year ago and it has been basically problemfree! way easier to wash each night than a regular reusable lunch sac (esp when half a pudding cup gets left in it all afternoon!)
Standard snacks like pudding or fruit cups, minigos etc, don't fit, but it's perfect for homemade food (best for us anyway!)
I got it at Scootergirl on Roncesvalles in Toronto, and there are several other stores nearby that carry them. Or order from their website.
@missmarc – My daughter has one and it's sooooo easy to clean. BPA free, but I put it on the top shelf of the dishwasher if it's really messy/sticky or just hand wash with soap and water and let it dry overnight in the drying rack.
@all – You can buy them online (see the link the blog author provided) or ask your local organic grocery or organization store. I find them in the Bay Area at Whole Foods and Storables year round and a few other places in August/September to prep for the new school year. They're a bit on the expensive side, but I've saved so much in plastic baggies – plus I've boosted my daughter's health by being more aware of portion size and healthy options for lunches not to mention limited garbage going to the landfills – that I think it's well worth it.
I have several Laptop Lunch Boxes and they are really great for portion control. I can't really see my life without it now. I've lost 58 lbs since July 2010 and my bento box has been an important part of that process!!! I love, love, love my Laptop Lunch Box.
