Happy Monday. Today is a holiday in the U.S., so some of my readers might have the day off from work. I sort of do. I am working from home, and likely eating leftovers for lunch, so instead I am sharing a lunchbox from last week. This lunchbox was completely vegan and gluten-free, but also grain-free on account of the crackers being made from almond flour. Nevertheless it was a very satisfying lunchbox.
Here are lunch and two snacks:
- Kale banana smoothie
- Vegan Herb Crackers
- Vegan Caesar Dressing
- Nomato from Naomi’s blog (see this post for my initial discovery of Nomato)
- Celery
- Grilled zucchini
