You know how much I like weekend lunchboxes. Here is one from a recent Sunday. This is just a lunch, no snacks:
- A red pepper, sliced into three “boats”
- Steamed collards
- Guacamole
I packed this lunchbox about an hour before eating it, so the guacamole survived just fine. That is one advantage of weekend lunchboxes – since they generally get eaten much sooner after being packed – is that I can include items that would ordinarily not last in a regular weekday lunchbox.
As the brevity of this post indicates, I am so so SO happy it is Friday. My mind is mush, so I do not yet have a plan for the weekend (beyond the usual, ie market on Sunday, two yoga classes, time with friends).

My "interesting" plans for the weekend include doing laundry, grocery shopping and hopefully a trip to Barnes & Noble to shop for cookbooks. I love looking through their cookbook section – so many choices.

What a fantastic concept! I love the fact that you are offering an alternative to the sandwich for lunch, and such tasty and healthy options! I'm going to take a good look around and be inspired, we picnic a lot and avoid eating in restaurants, it's usually disappointing and not made the with the same loving energy.
