Happy Monday! I tend to bring treats as part of my lunchboxes on Mondays and Fridays. And Elana’s Almond Power Bars, which I made for Adopt a Gluten Free Blogger this month, definitely count as a treat. I used raw chocolate to top the bars, and the combination of the bar, which is almondy and satisfying with the raw, not-too-sweet, chocolate takes it to dessert status instead of healthy snack status, though of course, this is actually a healthy snack packed with little sugar and lots of nutrition and good fats. I unwittingly made the power bars raw because I used raw almond butter.
The other treat? Twin Oaks tofu, which I love love love. It is dense and flavorful and holds up well to grilling. And it does not need to be pressed.
Today’s lunchbox has a very large portion of quinoa salad, designed to be eaten over two meals, and two snacks:
- Quinoa salad with pesto, grilled Twin Oaks Italian Herb Tofu, red pepper, white beans and chard.
- Kale banana smoothie
- Elana’s Almond Power Bar

Wow, the almond power bar sounds amazing! I love anything almond-flavored, especially with chocolate, so this is right up my alley!
I've been meaning to ask you if you've been to Roots Market in Clarksville, MD? If not, it's definitely worth a trip. They have a huge and amazing gluten-free aisle, tons of dairy-free goodies, etc. It's also right around the corner from a fabulous vegan restaurant called Great Sage (with delicious and well-labeled GF options!) We made a day trip up there the other weekend, and it made me think of you!

I really wish you would come and pack my lunches every day! Not only do they all look super healthy and delicious, but you manage a lot of variety, which is probably my number one problem these days. Sometimes I end up eating the same thing two out of my three meals of the day!
