Today’s lunchbox consists of:
- Green Smoothie with Banana, Hemp and Kale
- A kabocha squash smoothie (same method as a pumpkin or butternut squash smoothie, but using roasted kabocha squash)
- Leftover stir-fry that my husband made
I find smoothies to be incredibly filling, particularly when they contain protein powder and/or hemp seeds, hence the slightly more bare lunchbox than usual Still, there are 32 oz of smoothies there, packed with about 5 servings of fruits and vegetables and 30 grams of protein between the two. As well as another one and half cups of stir-fry.
The reason for this double smoothie fest? My Vitamix is making strange noises and the variable speeds no longer work. Boo. I called Vitamix and they sent me a shipping label so today is the last day you will see smoothies in my lunchbox for a while. I guess I will become more reliant on the food processor for a while, as well as the new juicer we purchased when it became clear the Vitamix would need to be sent back to the factory. I had planned to buy a juicer in April in time for all the great summer produce, but knowing I would be without green smoothies soon, I knew I needed a way to get some liquid greens in me, so the plan is to make juices instead of smoothies for a couple of weeks. When the Vitamix comes back, I suspect I will alternate between making smoothies versus juices.

I absolutely never would have made a squash smoothie on my own idea – lets be honest, it's odd enough putting spinach in! I love the idea, though! What sort of flavor dos it have? I know in a green smoothie, you don't really taste the spinach/kale/whathaveyou, is it similar for the other version?
I started my day with a big green smoothie and some great exercise. It's amazing how much better I feel when I take the time to do these things in the morning. Love the looks of your stir fry.

Oh no, sorry about the vitamix. The week I lost my blendtec due to repairs was the worst ever. Now I have a back-up.
Do you drink smoothies for breakfast too? Or just lunch. I used to have a big one for breakfast and save half of it for a snack at work.
