Happy Thursday. Today’s lunchbox contains:
- Curry Laksa from Appetite for Reduction, which is one of the cookbooks we are cooking from this month
- Nacho Cheeseless Kale Chips
- Steamed kale
- Sunbutter Chia Pudding
The pudding was a “I need something else with this lunch and I have a waning Sunbutter jar but I do not want overnight oats” inspiration – so 3 tablespoons chia seeds and some almond milk ended up in the Sunbutter jar, along with some vanilla stevia and a pinch of sea salt. It is really pretty fabulous, so I am definitely remaking it this soon and actually measuring the quantities to share with you.
As it turns out, the Vitamix base/motor is completely fine, but something was wrong with the blade mechanism in the blending jar which is why it was no longer working. So that was actually pretty easy – just the blending jar needed to be replaced. You will be seeing more smoothies in the coming weeks!

I don't know if we've discussed my obsession with chia seed puddings, but it's quite over the top, and you've just given me a new one to try out. YAY!
And I may or may not have eaten an entire batch of "cheesy" kale chips straight from the dehydrator last night. Whoops.
