This is a Monday that feels like a Friday. It has been a hectic few weeks – in the meantime, today’s lunch and two snacks:
- Leftover red pepper and peanut noodle stir-fry my husband made
- Leftover spinach and tofu curry from Vegetarian Times (oddly, the recipe is not online, but it is similar to this)
- Steamed kale with a side of Cheezy Red Pepper Hemp Dip
- Celery, which also benefits from the dip
