Yes, another kitchen appliance has made its way into our kitchen, the spiralizer. It is actually amazing how many kitchen appliances I have managed to fit into our small apartment kitchen. I am loving the spiralizer, as I love the texture of noodles, and I find the zucchini ones just as satisfying, particularly with a good sauce or dressing. Today’s lunchbox has just lunch and one snack:
- Spiralized zucchini with Gena’s Cheesy Red Pepper Hemp Dressing
- Roasted carrots
- Grilled plain tofu
- Pumpkin Cranberry Muffin from Carol Kicinski’s upcoming Simply . . . Gluten-free Desserts: 150 Delicious Recipes for Cupcakes, Cookies, Pies, and More Old and New Favorites

How beautiful! I love the spirals!!
we often have roasted carrots at our house… seeing them in your lunch made me smile.
tell us more about this spiralizer… I have never seen one.
One of my support group members has a spiralizer and she often brings it to meetings and lets our children in the group use it to make zucchini and other "noodles." They love it and we enjoy the noodles. I think so much of enjoying food is the visual factor and these are very attractive and really do work well as noodles. This member is on SCD so she also makes a raw tomato sauce to go with them. Very yummy. Anyway, great looking lunch, Valerie!

What a healthy looking lunch box, i do like the look of those carrots. A spiralizer has been on my wish list for ears, i have not seen in the U.K, so I may just have to order it online.
