Happy Wednesday! Today’s lunchbox is from last week, as today I am going on vacation to visit my parents in Switzerland (see a past travel lunchbox here, or a snapshot from a past trip here). It has been very busy at work, so the above lunchbox is a good example of lunch, snacks and dinner:
And finally, I might be on vacation, but {Today’s Lunchbox} is not. I will post my travel lunchboxes Thursday and Friday next week, but in the meantime, I have a stockpile of lunchboxes I had not yet shared, a guest post from Faye, and some FAQs to answer, so expect a lunchbox-related post every day while I am away.

Look at all the colors, shapes, and textures in that lunchbox–very cool! Woohoo on the visit to Switzerland to see your parents! We've never visited, but want to as we have a few friends we've met on travel from Switzerland. Enjoy, Valerie!

@Bitt – I typically eat 1-2 servings straight out of the dehydrator. It was even worse when I was just making kale chips for me. But then I finally found a recipe my husband likes (Gena's Hemp PRotein Packed kale chips) so now if I eat most of them out of the dehydrator he gets sad, as he likes bringing them with lunches
@Shirley – THanks so much It is a lovely place to visit, though I have to admit it is hard to eat gluten-free and dairy-free when eating out here (you pretty much have to eat a lot of salads). Fortunately I eat at home with my parents here, so it is easier.
@Alisa – I am way too addicted to kale chips.
