I am back from visiting my parents in Switzerland! Last time I flew there, I mentioned how my transatlantic lunchboxes tend to be carb-heavy, but last week, when packing for my flight from Washington Geneva, I decided to take a hearty but grain-free approach. I also included a ton of water-heavy vegetables to help combat dehydration. This lunchbox was designed to last from when I left the apartment at 1.30pm on Wednesday last week until I got to Switzerland the next morning, so as usual I packed a sack of food with dinner and lots of extras and snacks:
Dinner:
- Spiralized zucchini noodles with chopped red peppers and grilled tofu, tossed in a quick sauce with a Sunbutter base (similar to this one) and a side of cucumbers
Snacks and treats:
- Naomi’s Raspberry Tea-Bread, with the modifications described here
- Red peppers and celery for snacks, along with a pouch of Artisana Cashini. I love nut-butter pouches for travel.
- Pumpkin Cranberry Muffin from Simply . . . Gluten-free Desserts, which I reviewed here
- Larabars
- Chocolatey snacks – because I firmly believe something chocolatey should be part of any long flight – in addition to the Chocolate Coconut Chew Larabar, an Artisana Cacao Bliss pouch and this lovely mix from Nutsonline:
In the end, I ate the spiralized zucchini, the cake, the muffin and all the veggies, but skipped the Lara-bars and the nut butters in favor of the White Chocolate Chip Almonds, Cashews and Cacao Nibs. It is so so so so good:
Going grain-free for the trip actually worked better than I expected, though looking at the above, I ate a lot of nuts and nut meal. While it was balanced out with a lot of veggies and I am a big believer in eating healthy fats, I wish I had had more carbs for this trip (particularly since I ended up skipping the Lara bars). I structured my return trip lunchbox – which I will post tomorrow – to include more carbs.

I am a firm believer in chocolates for a long trip too.
I think I will try that sunbutter sauce. I am getting more into zuch noodles.

dark chocolate is by far my favorite snack for long trips – i love it!
I do a lot of clif and lara bars for trip snacks, although fruit jerky strips have been getting a lot of love too!
