Happy Monday. Today is my first day back at work after a nice 10 days off. Today’s lunchbox contains lunch and two snacks. For this lunchbox, I went with easy staples, like a green smoothie, steamed kale, a brown rice dish and some tofu. While the first snack is clearly the green smoothie, the second snack is more just an extra portion of lunch:
- Indonesian Coconut Rice from Vegan Fire and Spice: 200 Sultry and Savory Global Recipes
- Diced raw fennel
- Lightly steamed kale
- Grilled Twin Oaks Tofu (the plain kind, but plain in a delicious hearty way) with Carrot Ginger Dressing from Appetite for Reduction for dipping
- Green Smoothie with Banana, Hemp and Kale

Valerie, hemp seeds are new to me. Why do you put them in your smoothies?
