Yes, I know, it is only Tuesday, but part of me is already dreaming of the weekend. What can I say – re-entry after a vacation is always a bit of a jolt. I have talked before how I love weekend lunchboxes – they can make a packed weekend day so much easier.
Today’s lunchbox is just designed as a lunch, no snacks – it came in handy a couple of weeks ago on a Saturday of errands and working:
- Raw fennel, celery and carrots with Gena’s Cheesy Red Pepper Hemp for lunch
- Pumpkin Cranberry Muffin from Simply . . . Gluten-free Desserts, which I reviewed here, for dessert (and protein, as it is a grain-free nut-based muffin).
