Thank you for all the great comments on Iris’ guest post and also on my post about my lunches feeling boring. I loved Iris’ lunchbox post – as well as the way she crops her picture. I am trying it out above in fact.
Today’s lunch and two going on three snacks are:
- Leftover stir-fry (made by my husband) which includes peppers, zucchinis and broccoli. with a side of steamed kale and some of this cheeze dip (made with white beans)
- Chia juice pulp crackers with an adapted version of Mama Peas’ Mmmm sauce (I used white beans instead of chickpeas and skipped the oil and water in favor of 1/3 cup homemade vegetable broth) for dipping.
- Super quick green smoothie
- Carrot Pulp Bread (made with duck eggs and coconut oil instead of chicken eggs and butter)

I'm going to have to make those chia pulp crackers. It never crossed my mind before!
So many colors … so much nutrition … so much goodness. Love that green smoothie. The more vivid green, the better! 😉

I LOVE the idea of broth in the mmmm sauce. I just made it this weekend but didn't like the fact it used so much oil!!
