I am so excited that Faye, who has contributed 10 lunchboxes to {Today’s Lunchbox} has set up her own blog: Raw Lawyer. I am loving the recipes, the reflections and also a series called Fast Fixes. Be sure to stop over at the Raw Lawyer as Faye is fabulous.
- Shredded zucchini pasta (having used just an ordinary peeler) with marinara sauce recipe by Jennifer Cornbleet (video recipe below)
- Modified ‘Move Over Mayo’ from Simply Raw (though I can’t find Natasha’s recipe online) as a dip with cucumber, grape tomatoes and celery
- Garden salad with Conservation burgers and Gena’s amazing Tomato Curry Dressing
- Mandarin Oranges
- ‘I Can’t Believe it’s Just Cabbage!’ salad
- Cultured veggies (cabbage)
Above: Marina sauce, Move over mayo (moon shaped container) and a little container of the salad dressing.
Jennifer Cornbleet’s Pasta and Marinara Sauce recipe is one of the first I discovered a year ago when I went high raw. It’s easy and you don’t need any fancy equipment. You can use a spiralizer to make the zucchini pasta (and I own one), but I much prefer make pasta with a just a regular vegetable peeler. I then toss the long strips of ‘pasta’ with a little sea salt to soak up excess liquid while I make the sauce.
You can use a food processor for the sauce, but this time, I just made it in my Blendtec Blender as I prefer minimizing how many dishes I need to wash.
Here she is making the recipe. Enjoy!
Thank you Faye! As it turns out, today is a great day for Faye to guest-blog a lunchbox as I am having lunch with Quick Cook Rice.
