Happy Friday! I do not know about you all, but Fridays and Saturdays tend to be days where we are almost completely out of vegetables and my lunchboxes tend to get a little more bare. This lunchbox is from last Saturday, when I had to go to work and needed an unanticipated lunchbox. We went out Friday night to Rasika with friends – incidentally, Rasika is so much better than I remembered. I think they have changed their menu as there are more gluten-free vegan options than before – and I brought home half of the Andrha vegetable curry, which served as the base of my lunchbox. Here are the components of lunch and a snack:
- The leftover vegetable curry atop quinoa and white beans, which I had in the fridge from another meal.
- A cut-up green pepper, which was the only green vegetable we had left in the fridge at that point (we did have carrots too, but I wanted green)
- Carrot Pulp Bread (made with duck eggs and coconut oil instead of chicken eggs and butter) – clearly I made a lot of this and frozen it as it has been showing up in many lunchboxes lately.
The vegetable curry was lovely, but there were two other dishes at Rasika that were much more amazing (hence, there were no leftovers of those) – the Broccoli Cashewnut Poriyal and the Bhindi Amchoor. The former was an explosion of heat and shredded coconut with roasted broccoli, while the later was a tangy okra dish. Unlike the vegetable curry, both were dry curries, which meant they were delicious as standalones without bread (all their breads have gluten) or white rice (which I tend to skip, but which is especially weak at Rasika to begin with). I think I have to make it back to Rasika soon!

Rasika is my favorite restaurant of all time! Love that place!
Leftover curry- a favorite around here. I could eat it for breakfast.
Don't you just love good restaurants like that, where vegan gluten-free curries are plentiful and easy? It's hard for me to leave leftovers – no matter how large the portions! LOL
