Today’s lunchbox is one I saved from a few days ago and have not yet shared. It is perfect for today’s lunchbox inspiration as today at lunch I plan to stop by the Gluten-Free Labeling Summit 2011 organized by Jules Shepard and John Forberger. I am so excited this event is happening in Washington, DC. I have found gluten-free label-reading to be very frustrating. Often you will see a packaged item state gluten-free on the front, but then have no mention of any sort of gluten testing anywhere on the package. I was actually pretty shocked when I discovered there is no final FDA rule on standards for gluten-free labelling. I still need to figure out a lunch to actually bring with me today – I need something portable and easy. In the meantime, today’s lunchbox inspiration is a workday lunch I recently loved:
- Steamed broccoli
- Stir-fry with peppers, tofu, zucchini, scallions and Emily’s Four-Ingredient Peanut Sauce (with Coconut Aminos, which I mentioned yesterday) and these brown rice noodles– as you might know from reading this blog, my husband makes the stir-fries you see in my lunchboxes
- Chia Juice Pulp Crackers
- An apple with organic Sunbutter, which is my favorite because it contains no sugar. I should totally have used Heather’s trick for the apple – next time for sure!
- Azuki bean-edamame dip – I am still tweaking the seasoning, but promise to post the recipe soon!
