Sometimes I wonder if I don’t have enough color on my plate / in my lunchboxes. I know the ideal is a rainbow, whereas I tend to just have a lot of green and browns and beige. Though I guess the sweet potato would add a bright pop of orange if I had not mashed it with raw cacao. Today’s lunchbox and two snacks:
- Steamed broccoli with some of a very forgettable brown rice experiment (flavors were good, but I overcooked it) with a lime to juice over the brown rice to perk up the flavors right before eating.
- Black beans (cooked in the rice cooker) topped chopped scallions, which will also benefit from the lime
- Gena’s Protein Packed Kale Chips from Choosing Raw
- Roasted sweet potato, peeled and mashed with half a tablespoon of Artisana Coconut Butter, a heaping tablespoon of raw cacao and 20 drops vanilla stevia

Wow I'm so glad you commented today. I love looking at these lunch boxes! So healthy and great variety. Yum!
If there is a color to have too much of, green is it! I usually get my other colors from fruits but the green in the smoothie covers it up. That broccoli looks good. As do the kale chips, always a great snack.
agree with Bitt — if you're going to OD on a color, go green. This looks great.
