Hummus and nori: unlikely combination perhaps, but it really works in this instance. I usually use nut or seed pates or quinoa in nori, but when I was making Gena’s High Protein Hemp Hummus I noticed she suggested as an alternative to stuff it in seaweed. The hemp hummus is nutty and complex, so it works well with seaweed.
This is a lunchbox from a few days ago when I knew I would be having very long day at the office, so it is basically lunch and three snacks:
- Seaweed with high protein hemp hummus
- Pumpkin chia pudding
- Small apple, cored and stuffed with Sunbutter and held by a rubber band, a trick I learned from Heather (who, incidentally, just posted a tempting sundried tomato hummus recipe on her blog)
- Protein Packed Kale Chips
- Steamed broccoli
