Thank you for all the nice comments on my Carob Mint Smoothie – it is almost milkshake like in texture, and perfect for warm days. Also, be sure to check out my 1000th post. I still cannot quite believe I have written that many.
The chia pudding on your picture is what happens when I realize I have nothing else to add to lunch and cannot thing of anything to add other than chia pudding, fast. I poured a cup of coconut milk beverage, added a dropper full of vanilla stevia, three tablespoons of chia seeds, and then I just closed up the jar and shook it. Ten minutes later I shook it again, and called it a day. Hence the messy jar. Totally comforting and delicious though.
Today’s lunch and one snack:
- Steamed Broccoli
- Gena’s Famous Black Bean and Red Pepper Dip
- Homemade Sunshine Burgers, also from Gena
- Shaken chia pudding (no stirring occurred in the making of this chia pudding)

lolol! You are funny!! I love this lunch box and I SO have to make that carob mint smoothie!! I have tons of raw cashews (since I've cut out dairy and have plans for 'cheeezy' sauce) but i'm still sort of at a loss for what to do with them!
Would it be bad to eat a food every day? Sometimes twice a day? I'm really thinking I need a crown of broccoli, steamed like this, for lunch daily. Going to check out those sunshine burgers now!
