Today’s lunchbox includes:
- Chia Chocolate Pudding for the Exhausted
- Quick Greek Tofu Salad (see below for recipe)
- Raw Mom’s Kale Salad
- Green Juice: Apple, Spinach, Celery, Carrots
- Apple
- Red Cabbage Cultured Veggies
We made two Greek salads for dinner last night; one for me and one for my husband. His had feta cheese (not vegan-friendly) and olives (which I hate).
Quick Greek Tofu Salad
- Red Onion, finely sliced
- Cucumber, chopped into chunks
- Tomato, cut into wedges
- Fine herbs tofu, cut into chunks
- Olive Oil
- Oregano
And toss.
I included the tofu because I wanted something white and chewy to substitute for the feta. I’ve been experimenting with making my own firm almond cheese lately but I’m not quite there yet. I made a decent batch last week, but I still need a little more practice. I’m almost there. And I didn’t want to sprinkle Daiya onto the salad – that just seems wrong.
