Thank you for all the great comments on the Bloggy Vegan Quinoa Pizza recipe yesterday. Like I said, it is very much an adaptation of several bloggers’ recipes, which I wanted to put all together in one recipe.
Today’s lunchbox has lunch and three snacks:
- Spinach salad, topped with a veganized version of this black bean salad (I also cut back the oil in the recipe pretty significantly), with a carrot and a side of grilled tempeh
- A slice of Bloggy Vegan Quinoa Pizza, which makes for a pretty awesome snack
- Small apple, cored and stuffed with Sunbutter and which should have been held by a rubber band, a trick I learned from Heather, except that I got sunbutter all over the rubber band and it slipped off when I was packing the apple
- Green Smoothie with Banana, Hemp and Kale

I love how you lay on the big vegetable pieces on your pizza. So yummy and so good for you, too! I see so many variations of this pizza. I have to get on board with this program. 😉
